Weight held steady @ 280.4 from yesterday to today. I'm ok with that, had an enormous dinner last night.

4 eggs in butter, coffee, whey

2 sets of boneless ribs with hot sauce and ranch (they were a little dry after the re-heat)

1/3 of a 13x9 pan of noodle-less lasagna. Without getting into the nitty gritty
2 pounds ground beef
1 pound italian sausage
2 cups ricotta
2 cups mozzarella
2 eggs
2 cups pasta sauce
shredded parmesan
italian spices
pepperoni

Cook the meat, put in the the pan. Mix up the cheese, eggs, and spices. Top meat. top with pepperoni. Bake @ 350 for 30 minutes.

Pork. I wish I could eat it more frequently, but twice a week is about my max unless its in bacon or sausage form. Good protein and fat on it, pretty versatile. I just need to stay creative with it.

4 eggs in butter, coffee, whey

Finished off the left over lasagna over 1st and 2nd lunch

Dinner: Dijon Cream Pork Chops and Steamed Veggies
This is a visually appealing meal, something you could impress guests with and not put too much effort into. Only the pork is listed on how to cook as veggies are pretty easy. I just did a mix of carrots and broccoli in butter and some cauliflower mash.

12 pork chops, 1/2 thick (these were actually from a boneless loin I got on sale, so you may not want 12 if you use real chops)
Butter
Cream
Dijon
Salt

I was in the mood to cook last night, so I didn't really measure anything, I just went with the flow. I browned the pork in a heavy cast iron skillet, working in batches, and transfered the cooked meat to a pan in the over @ 350 (Fahrenheit for those of you not in the US, otherwise you might end up with overly done chops, which is a sad thing indeed)

Once the pork is complete, quickly add heavy cream, probably around 2 cups, maybe 1.5, and scrape the pan as it boils. Add some salt and a generous amount of good quality dijon. (I'm using Maille or something like that.)

Stir for a while until the sauce thickens enough that you leave large trails behind when you scrape the pan. Plate the pork, drizzle sauce over and enjoy

Bama's Pizza Crust is Legit. Fantastic stuff.

Yesterday was egg day.

4 eggs, 2 strips bacon

6 eggs in butter

Egg/Cheese Crust pizza for dinner.

I made 2 varieties, a traditional and a white pizza. The traditional had onions, peppers, pepperoni, and italian sausage with a red sauce.

The white topped the crust with ricotta mixed with italian herbs, shredded parmesan, thinly sliced tomatoes, garlic, and fresh basil. Its a toss up, both were outstanding.

Have some Ribs on the smoker as we type. I have cut down my pork intake, mainly the occasional bacon ( my wife likes the convenience of the pre-cooked stuff), Pulled pork, and RIBS. Tonight is rib night.

Glad you liked the Pizza Crust. I need to make some again, I had kids begging for more last time I made it. WARNING, IF YOU ARE A FATOPHOBE, THIS CRUST IS NOT FOR YOU!
