Default Want to be strong (5x5 or something else)

I am not new to the weight room but am new to powerlifting/strongman. I have another thread about changing my diet but now to the important part, what to do in my happy place (the power rack). I have a couple competing theories but the basics is I can work out 3-4 days a week and one day will be strongman day (keg lifts, farmers carry, yoke walk, etc). My work schedule alternates weekends so my days off look like this:

Week 1 Mon Tues Thurs Sat
Week 2 Tues Thurs Fri
I work out at my (community) college gym and it is closed on Sunday.

Let me know which program you think would be more benifitial to a seasoned beginner

Plan A
Day 1 6x2 of Squat, Bench, Deadlift, Push-press
increase to 6x4 when all completed on a lift
same to 6x6
after complete remax the drop to 6x2

Day 2 same as above

Day 3 Strongman day

Plan B
5x5 2-3/week

Bench 325 (no pause) 285 (1 sec pause)
Squat 395
Deadlift 425
Snatch 155
Clean & Jerk 225

I would just stick with a 5x5 or use 531. When in doubt KISS. Keep it simple stupid.

Seems like a big jump from 6x2 to 6x6.
Any plans for when the progression doesn't happen?

Yeah, you increase by two each time. If it doesnt increase you lower 2-3 sets and up it to five reps to work on form and speed
