Digestibility of Cooked and Raw Egg Protein in Humans as Assessed by Stable Isotope Techniques


Protein Bioavailability

Cooking raw eggs increases the bioavailability of the protein in them. According to a 1998 study published in the "Journal of Nutrition," 51 percent of the protein found in raw eggs is bioavailable, meaning only about half of the protein in a raw egg can be absorbed by your body. In contrast, by cooking the egg, the bioavailability of egg protein increases to 91 percent, making cooked eggs a much better source of available protein than raw eggs.

That's was great, thank you. I do think I will continue to add raw eggs to my shakes though. Since I can't drink milk; 3 raw eggs 1/2 cup of water and 1 scoop of whey makes a delicious shake. But I should probably increase my cooked eggs consumed. I think I need to eat more anyway.

One other thing I liked about raw eggs are their anti-oxidant properties. It halves when you cook them. But now I wonder how much of that I absorb anyway...

4 or 5. I love eggs. Hard boiled ones I often just buy at the store. They are already peeled which makes for a perfect snack for me.

I do not really eat that many eggs. It may have to change though once I start lifting. I have heard that eggs are good for you so I guess it may be a good idea to invest in some and have them daily then.
