Why are dried fruits higher in sugar content than a regular piece of fruit?

As Tannhauser states, they're not higher in sugar content per se, they're in a denser form/state, due to the removal of water (dehydrated) which means pound for pound they will register as having more sugar as the hydrated version but only because water adds to the weight with the latter whereas it doesn't with the former.


For example, companies may state 50% fat for the following and technically get away with it...

If you have a pack of butter it's 100% fat but place it in an equal mass of water and it's now 50% fat but in reality it's still 100% fat because water is just well, water which doesn't alter the fat content.
