I have an entire chapter on the glycemic index in my “Eating Plan” book. I love em, I add sea salt, coconut oil and butter and use chicken stock and Milk instead of water. I don't consider them a Vegetable though and I always try and get 4 Servings of Veggies a Day(My Servings are a lot bigger than Recommended Servings). Succotash goes hand in hand with mashed potatoes.

Don't know what was wrong with regular mash potato, but ok. :L
