Zucchini Noodles with Avocado Sauce and Prosciutto
via Paleo Dieting

4 medium zucchini
1/2 cup + 2 tablespoons olive oil
2 cloves garlic, minced
2 medium ripe avocados
1/2 teaspoon sea salt
2 tablespoons lemon juice
4 slices prosciutto, sliced in thin strips

Blend avocado, salt, 1/2 cup olive oil, and lemon juice in a blender or food processor until completely smooth, set aside. Slice zucchini very thin, (or use a spiral slicer* like I did.) Heat 2 tablespoons olive oil and garlic in a frying pan over medium high heat. When oil is hot add zucchini and stir. When zucchini starts to get soft and is coated in oil, add avocado sauce. Take off of heat and stir in sauce. Top with prosciutto and serve immediately.

Roasted Cauliflower and Bacon Soup:

Roasted Cauliflower & Bacon Soup | Cavegirl Cuisine

1 head organic cauliflower
4 cloves of garlic
1-2T almond oil
3T butter
1 yellow onion, roughly chopped
3 celery stalks, chopped
1T Herbes de Provence
1 tsp arrowroot
1 slice of Applewood smoked bacon, finely diced
6 cups broth of choice (I use homemade chicken broth)
1/4 cup organic whipping cream (optional)
2-3 tsp sea salt (to taste)
1 tsp ground pepper
6 slices of Applewood bacon (for garnish)

Preheat oven to 350 degrees.

Chop cauliflower into chunks. Place cauliflower and garlic in a baking dish. Drizzle with 1-2 T of almond oil. Bake for 30 minutes. Remove from oven and set aside.

In a pot, place butter, onion, celery, Herbes de Provence, one slice of bacon (diced) and arrowroot on medium heat until butter is melted and onions are tender.

Add cauliflower, garlic, broth, salt & pepper. Bring to a boil. Reduce heat and let simmer for 15 minutes.

Use an immersion blender in the pot until smooth (alternative: blend ingredients in a blender and pour back into the pot).

Add whipping cream. Continue to simmer for 15 minutes.

In the meantime, cook the remaining 6 slices of bacon until crisp. Set aside.

Serve soup and crumble bacon on each bowl as a garnish as desired. I didn’t have parsley at the time, but this may be a nice added touch for color, taste and texture as a garnish.

Someone beat me to this. Onion, pepper, celery are non negotiable a for true jambalaya. The author of this recipe left out the celery, a New Orleans cooking no-no.

PaleOMG – Paleo Recipes – Jambalaya

Jambalaya
Prep time: 10 mins Cook time: 15 mins Total time: 25 mins
Serves: 3-4

Ingredients
2 andouille sausage, sliced
2 chicken breasts, cubed
2 garlic cloves, minced
1 yellow onion, diced
1 green bell pepper, diced
1 head cauliflower, riced
1 (6oz) can tomato paste
1 (14oz) can diced tomatoes, undrained
1 cup chicken broth
2 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon dried parsley
½ teaspoon cayenne pepper
salt and pepper, to taste
Instructions
First get everything ready. It’ll make your life simpler. Dice all your veggies then throw your cauliflower in the food processor with the shredding attachment to rice the cauliflower.
Now heat a large pot over medium-high heat with your olive oil. Add your garlic until it becomes fragrant then add your onion and green bell pepper to begin to cook down.
Once the onion in translucent, add your cauliflower, broth, chicken and sausage. Mix together. Cover and let cook for about 5 minutes.
Then add your tomatoes, tomato paste, and spices. Stir to incorporate.
Cover and let cook for another 5-8 minutes or until cauliflower is tender and meats are cooked through.
Let sit for around 5 minutes to cool.
Consume!

2 cups shredded cabbage / carrot / broccoli – bagged slaw mixes would also be perfect
¼ cup almond flour
⅛ cup coconut flour
2 eggs
1 tbl fresh cilantro
1 tsp minced garlic
Oil of your choice for frying

CHILLED SWEET AND SOUR CUCUMBER NOODLES


INGREDIENTS:

2 medium cucumbers, peeled
1/2 cup diced red onion
3/4 cup rice vinegar
2 1/2 teaspoons sugar
1/2 teaspoon crushed red pepper flakes (optional)
1 1/2 teaspoons white sesame seeds

Equipment: a mandoline or spiralizer

DIRECTIONS:

Attach the julienne blade to the mandoline and adjust it to the 1/8-inch-thick setting. Applying medium pressure, carefully run one of the cucumbers down the blade to form noodles, slicing until you reach the core. Rotate the cucumber a quarter turn and continue slicing and rotating until you've cut the entire cucumber. Repeat the slicing process with the second cucumber then transfer the cucumber noodles to a medium bowl.

Add the red onion, rice vinegar, 1/4 cup water, sugar and crushed red pepper flakes (optional) to the bowl. Cover the bowl with plastic wrap and refrigerate the cucumber noodles for a minimum of 2 hours, stirring occasionally, until chilled.

While the noodles are chilling, toast the sesame seeds in a small saucepan over low heat until golden brown.

When ready to serve, use tongs or a slotted spoon to transfer the noodles to serving plates and top with the toasted sesame seeds.

Kelly's Notes:
If you're using a spiralizer instead of a mandoline, simply twist the cucumber into the spiralizer to form noodles.
