Default Low carb snacks and meals

11-19-13
Come on guys and ladies I know there are a lot of you out there that have some amazing low carb meals/snacks I would love to see what others are eating. Yes, I'm doing the low carb/ keto diet and will be honest I would like to have new ideas. I will start:

Pepperoni Chips

1 paper plate
1 microwave
1 bag pre sliced pepperoni

Directions: take about 6 -8 pepperoni place on paper plate. Cover the plate with a paper towel. Set the microwave for 45 sec. Take plate out of microwave let the chips drain on a paper plate and enjoy.

My favorite is a coup of sour cream with jalapeno peppers and as much cheddar cheese as I can stand. This is a great salty late night snack.

I also like to take summer sausage, dice it up small, and then cover it with hot sauce and minced garlic. Darn good.

A good ranch and salsa is also good.

One of my standards... Buffalo Tuna. 1 can of tuna, buffalo sauce and blue cheese or ranch dressing, mix, eat!

Spicy Omelet:

5 eggs, 1 can of chunk chicken, 2 or 3 slices of pepper jack cheese, + favorite hot sauce (optional).

And if you suck at making omelets just scramble the eggs & chicken together, put it on a plate, slap the cheese and hot sauce on it and you're good to go.

The Key to both pancakes and omelets. Don't turn too early. For the omelet, let cook until the eggs set, meaning no juicy liquid, then flip and cook for about 30 seconds more and you should be able to fold it right out of the pan.
