EGG SANDWICH WITH BALSAMIC MUSHROOMS AND ONIONS
2 slices of whole wheat bread
2 whole eggs
1/4 cup of button mushrooms, sliced
1/4 cup of onion, sliced
pinch of garlic powder
pinch of dried thyme
1 tbsp. of balsamic vinegar
parsley, salt, and pepper (to taste)
Heat a skillet on high heat. Place onions, garlic powder, spices, balsamic vinegar, and mushrooms in the skillet with olive oil and cook until tender.
Toast bread in the toaster.
Fry the eggs until they’re over-easy (yolk is runny, whites are solid).
Smother the bread with the mushroom-onion mixture, and top each slice of bread with 1 egg.
