And if you suck at making omelets just scramble the eggs & chicken together, put it on a plate, slap the cheese and hot sauce on it and you're good to go.
The Key to both pancakes and omelets. Don't turn too early. For the omelet, let cook until the eggs set, meaning no juicy liquid, then flip and cook for about 30 seconds more and you should be able to fold it right out of the pan.
