Thus, the cholesterol content per 100 g of cooked lean meat as eaten would be greater than in the fresh by one-sixth to one-third the difference between the fresh and dry values as given in the table. Perhaps even more convincing is the comparison of the trimmed lean cuts with each other in the table, which brings out clearly that contrary to popular opinion, the leaner the meat, the higher the cholesterol content in a reasonably linear relationship.
