Zucchini Noodles with Avocado Sauce and Prosciutto
via Paleo Dieting

4 medium zucchini
1/2 cup + 2 tablespoons olive oil
2 cloves garlic, minced
2 medium ripe avocados
1/2 teaspoon sea salt
2 tablespoons lemon juice
4 slices prosciutto, sliced in thin strips

Blend avocado, salt, 1/2 cup olive oil, and lemon juice in a blender or food processor until completely smooth, set aside. Slice zucchini very thin, (or use a spiral slicer* like I did.) Heat 2 tablespoons olive oil and garlic in a frying pan over medium high heat. When oil is hot add zucchini and stir. When zucchini starts to get soft and is coated in oil, add avocado sauce. Take off of heat and stir in sauce. Top with prosciutto and serve immediately.
