Hi Trent,
You can use it instead of brown rice. Here is a little more about it.

Took one bite of eggplant once and did not like it, eewww! Not sure if I'm ok eating something purple unless it's raw steak:D

Quinoa looks clear after cooking. It is virtually tasteless and full of protein. Goes great with salsa.

BtBs right, full of protein, but in my experience tastes horrible.

Then gain I didn't have much with it.

I had some garlic butter cheese or something it was pretty tasty. I had some chicken with it and it wasn't bad. I'd invite you to try to cook it couple times.

It reminds me of couscous too.

Quinoa is a great alternative to rice. True, not much flavor, but it packs far more protein and is pretty caloricly dense. Unless you are going to use it for a dessert dish or breakfast dish, cook it with some chicken or beef stock. It tends to take the flavor of the stock. I don't recommend bullion as the amount needed to bring out the flavor makes the quinoa too salty for my taste.

I'm a big fan of using it in risottos.

Yeah, I've heard it's bland and takes on the flavour of whatever you cook with it or in it; haven't tried it yet but we do have some.
