Default Glute ham raise vs Hyperextensions for squats ?

You cant go wrong with either. I dont have a hyper, so we do glute ham raises.

Reverse hyperextensions are also a good accessory lift. However, I agree that GHR's are awesome and have helped me improve my depth on squats at higher weights.

I agree with J_Byrd. I built a reverse hyper table for the Dog House, but it is a pain to set up when time is tight. They actually hit the hams and glutes in different ways. If possible, make use of both. If you can only do one.... hmm, depends on the situation. A home gymer would probably do better with GHR.
