Not sure why roasted nuts would have a huge difference over raw in their fat content. Burned nuts I could see, but properly cooked ones shouldn't make that big of a difference.

Are you talking about roasted nuts that are sold in bags, commercial style? I If so, it may well be the oil added to the nuts that the person is referring to; it may or may not be bad fat but either way it adds more fat to the product and they normally have added salt as well.
