Once the cheese was ready, it went into a salt bath for a period of time, and was then aged. I mention this because I have read on forums how cheese was a "dirty" food. I think it's far less processed than milk, maybe by a long shot.

Yeh proper cheese is AMAZING, pretty high in calories as stated, but is definitely not a 'dirty food' IMO. All natural and loads of protein... sounds good to me

On the BB side milk and cheese have a dirty rap Because of this:
After a days of birth we all actually become allergic to dairy/milk. Its a very small allergy and the side effects is thin fat build up just under the skin. This produces what we call Baby Fat as stores for the rapid growth we go threw the first year. Have you ever seen a skinny baby? So BBer call it bad and cut dairy out in last stages of cutting to get the lean and loose that thin layer of fat just below the skin. Cutting cheese the last week is to also help with sodium control depending on the way you do your prep. If you (BBers) arn't going on stage in a week or two and you cut dairy for the fat and sodium you only hurting your own progress.
