Favorite omelet filling
 

What is your favorite omelet filling? I love an omelet with some spinach, onions, and mushrooms with some low fat cheese. How about you?

Spinach, onions, cheddar cheese and green chiles, cooked in butter and covered with a little hot sauce.

Bacon, feta, fresh peppers and sugar free ketchup or salsa.

Don't be afraid of full fat cheese -- cheese is a "good" fat

Ground pork sausage and cream cheese.

Never tried cream cheese in an omelet, but will try it soon. Sounds interesting.

1 heaping spoon paleo mayo
1/4 cup parmesan cheese (cheap stuff is good here)
1 canned artichoke heart, diced

Cook sausage, crumble in skillet. Add cubed cream cheese, incorporate until hot and bubbly. Spoon into omelet or on to egg. Or just put on fresh onion bun!!!!!
