Check out the Mountain Dog training by John Meadows. Most days are pretty normal. But he hits delts and rear delts more specifically with 35 and 60 rep sets.

I'm a fan of high total reps for all sets. I usually get 35-40 reps per excersise in a pyramid format. Except shrugs.. I do 50 rep sets in the HS Shrug machine, and my traps are picking up size pretty quickly.. But I am also lifting heavy enough there to limit me to 5 reps at times..
