Spinach salad.
--Red wine vinegar --Olive oil --Spinach --Salt and pepper to taste --Diced onion --Minced garlic to taste --Cherry tomatoes or diced tomatoes --Parmesan cheese --Sliced black olives --Sliced mushrooms Dress salad with appropriate amount of oil first. Add in a moderate amount of red win vinegar and salt and taste. Adjust slowly as needed.

My Cauli mash.
Steam/boil one bag of cauliflower. Toss in a blender with: --Salt and pepper to taste --1/3 stick butter --Minced garlic to taste --Dash of hot sauce or jalapeno slices --Cheese of choice - Parm, etc. --Handful of spinach cooked and wilted down in olive oil (optional) Blend. Add in in a slight amount of sour cream and blend again. Continue this process until you reach a desired level of creaminess. Notes: Sometimes I make this extremely creamy, and serve it on top of pork chop or beef as almost a pseudo-sauce.

Crispy Green Beans W/ Bacon
4 strips bacon 1 pound green beans ( I like the thinner ones for this style) Crushed red pepper salt Cook bacon in a large skillet. Crumble and set aside. Pour of a little of the fat, leaving enough to cook the beans in. Cook the beans for about 5 minutes, tossing occassionally. We want them heated through, but not limp. Add in the bacon, a little salt if you need it, and 1 couple tbsp of crushed red pepper. Goes great with fish.

Not a side dish per se, but I have a game I play called "hide the spinach".
Take a handful or two of spinach, dice it down to around half inch to quarter inch cubes, and wilt in a pan with a little olive oil. The spinach will render down into virtually nothing, and can be tossed into everything from spaghetti sauce to meat loaf. It hides well, and is tasteless. You get some veggies, the kids don't notice it, and everyone wins.

BTB's Tomato Sauce
Finely dice 12-20 baby carrots and 2 medium onions. Cook in a pan with olive oil and a small amount of Italian seasoning for for 20 to 30 minutes on medium heat. Allow onion to slightly caramelize. (Just a small amount of caramelization. Don't overdo it.) Add two 15 ounce cans of tomato paste, and about a 1/2 cup water. Also add: --Minced garlic to taste --Salt and pepper to taste --Italian seasoning to taste (Most grocery stores have Italian seasoning blends) --Garlic power and onion powder to taste Let simmer on low heat for about 30 minutes, allowing the sauce to thicken just slightly. Nothing fancy about this sauce but it tastes darn good if you nail the seasoning.

BTB's Prosciutto and Mozzarella Salad
Combine the following in a salad bowl: --One heaping handful of fresh spinach, slightly diced --12 ounces of fresh mozzarella, cut into about 1/3rd to 1/2 inch cubes --4 medium to small tomatoes cut into about 1/3rd to 1/2 inch cubes --One medium onion diced --4-6 ounces of prosciutto cut into about 1/3rd to 1/2 inch squares Season with salt and pepper to taste. Splash in about 1/4 cup olive oil (or a hair more), and add small amounts of red win vinegar until the salad has the "bite" you prefer. Simple, but insanely good. You'll want to keep eating even after you're stuffed. Make sure to add salt slowly until it tastes just right.

Simple, simple, simple...
--1 package cabbage slaw with carrots. --4 Tablespoons apple cider vinegar --Salt to taste --3 tablespoons dijon mustard Mix well. taste, and add more salt, mustard or vinegar as needed. You shouldn't need much more than listed. You can add all sorts of things to this slaw...onions, etc. You can also add Paleo mayo.
