Flip and cook the other side, then remove to a plate. If you have a tortilla press, it makes the process a lot easier, but no reason to go out and buy one unless you eat a lot of these. |

The cheat meal of the week for dinner. A cheat because there is A LOT of cheese in this.
Coffee with 2 scoops whey 3 eggs and 1/4 pound of bacon One scoop whey with water 7 eggs, 1/3 cup of cheese, 2 green chilis, and 1/4 pound of bacon Dinner : Lasagna - Put away 1/3 of this tonight. Leftovers should last a day or two. Who needs noodles when you have this much meat? 2-3 pounds ground beef 1 pound bulk italian sausage (hot) 2 cans mushrooms 2 cups pasta sauce - lowest carb you can find or home made 3 cups ricotta cheese 3 cups mozzarella 1 egg garlic, oregano, basil, salt to taste Pre-heat over to 350 Cook meat until fully cooked, then add in mushrooms and pasta sauce. While this cooks down some, mix cheese, egg, and spices in a bowl In a large pan (13x9) put down a layer of meat, then spread the cheese mix over it. Place the rest of the meat on top, then add more mozzarella on top of it. Optionally top with pepperoni. Place in oven and let bake for 30-35 minutes. |

Christmas weekend was great, but lacking a computer for the most part. Great meals both days, but I’ll be listing the ones that aren’t just eggs and bacon for these two.
Christmas Eve: Smoked Brisket with sautéed Brussels sprouts, cauliflower mash, and roasted carrots. The brisket was smoked this summer by my dad, and then baked in an giant oven bag for about 6 hours for dinner. Carrots are standard pressure cooked and served with butter. Brussels Sprouts: 1 pound sprouts. 4 tbsp butter 2 tsbp chopped garlic Cut the sprouts in half, melt butter in a large pan. Add garlic, let cook for a couple minutes. Add sprouts cut side down, cover, let cook for 5 minutes on medium high heat. Flip and let cook for 3-4 more minutes. Christmas Day Ham, green beans, deviled eggs, and a spinach strawberry salad. Pretty straight forward, except for the salad, I’ll find out the recipe and post it this week. Smoked chicken and green beans This is the go to Sunday night dinner. Easy and quick. Pre-heat oven to 350. Place chicken, wrapped in foil, on a pan and let cook for 2 hours if frozen, 75 minute if defrosted. Once chicken is done, add a spoonful of bacon grease to a pot, drop in some green beans and warm them up. Simple, easy, and effective. Note: These are chickens that we smoked over the summer. If they are well wrapped, the stay good till the next summer. We smoke around 100 chickens a year, so there’s always plenty in the freezer. |

How are the taste of those sprouts? I am looking for a good and simple recipe, something the kids might actually try.
