Saturday:

3 eggs, 3 strips bacon, coffee

2/3 pound burger, no bun, extra bacon

Beef Pie Mexicali - an old Weight Watchers recipe that lends itself to de-carbing

Ingredients
SPICE MIX
2 teaspoons chili powder
1 1/2 teaspoons cumin
1 teaspoon ground coriander
1/4 teaspoon cayenne
1/2 teaspoon salt
1 tablespoon flour
FILLING
2 1/2 pounds ground beef
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 cups frozen corn, thawed, or 1 can (15-ounce) corn, drained ( i just leave this out)
2 cans (14 1/2-ounce) Mexican or chili-style diced tomatoes

CORN BREAD TOPPING
1 cup yellow cornmeal, 1/2 cup flour, 1 1/2 tablespoons sugar ( i substitute carbalose flour for all of it, no sugar)
2 teaspoons baking powder, 1/4 teaspoon salt
2 large egg
1 cup milk - calorie countdown milk has most of the sugar taken out
1/4 cup vegetable oil ( i just used melted butter)

1 pound sharp cheddar cheese

Lightly oil a shallow, 3-quart casserole dish. Combine the spice mix ingredients in a small bowl.
Brown the ground beef in a large nonstick skillet, breaking it up with a wooden spoon. Use a slotted spoon to transfer the browned meat to the casserole dish. Drain all but about 3 tablespoons of the fat from the skillet.
Put the pan back on the heat and sauté the onion and bell pepper for 7 to 8 minutes. Add the garlic and the spice mix, stirring all the while, then stir in the corn and tomatoes. Cover the pan and bring the mixture to a gentle boil, stirring occasionally. Stir the vegetables into the meat and level the mixture with the back of the spoon.
Heat the oven to 400º. Sift the cornmeal, flour, sugar, baking powder, and salt into a medium mixing bowl. Whisk the egg, milk, and oil in a separate bowl. Add the dry mixture to the eggs and whisk until evenly blended. Pour the batter over the filling and spread it evenly with a spoon.
Bake the Mexicali Pie for 22 minutes or until the topping is golden brown and a toothpick inserted into the center comes out clean. Makes 8 to 10 servings.

- Top with shredded cheese and put back in the oven until melted.

Girlfriend is back from her parents, so had a few things that weren't exactly what I'm supposed to eat, but hell, it wasn't too bad.

Mexicali sounds great.

Was gonna ask about macros with all the corn product, but then saw you subbed carbalose for cornmeal. Also love the countdown. Walmart is the only place I can occasionally find it around here, so I usually purchase a bunch when I find it.

Yeah, there's one about 7 minutes from my front door. Not my usual scene, but it was a lot of fun to get out and eat dinner with the girlfriend at a place that I didn't have to consider what fork to use. Back on the straight an narrow for a while, but it was worth slowing down the weight loss for a day or two.

It can be pretty tempting, especially on nights I get home late and would only have to drive 300 feet out of my normal route to pick up easy food for dinner.

Normal monday

3 eggs, 2 strips bacon, coffee

1 scoop whey PWO

4 eggs, 2 oz cheese, 1/4 jalapenos

Dinner: Taco salad with 12 oz ground beef, 2 oz cheese, and 2 tbsp sour cream

Harsh day today, nearly broke down and hit the restaurant circuit. You know, 2 dozen wings eaten on the way to the mexican place for nachos and a burrito, more nachos to go while you drive to the pizza place and down two large pizzas? That nearly happened. So close I had the shakes, but fortunately my rage outweighed my cravings, so crisis averted this time.

3 eggs, 2 strips bacon, coffee w/ whey

12 oz left over pork roast

1 scoop whey w/ water, 4 fish oil caps

Chicken Caesar Salad

I love my salads, but I have to be in the right mood for them or I start freaking out about heartier food.

3 eggs, 2 strips bacon, coffee w/ whey (eggs were 77 cents a dozen this week, so I'll be having more of them in the next few days)

1 scoop whey w/ water

8 oz left over pork roast

Spaghetti w/ meat sauce - using dreamfields pasta
2 pounds ground beef
1 pound hot italian sausage
1 pint home made marinara
4 oz pasta - dry

Brown meat, pour off excess fat
Cook through, then add sauce
Note: if you have store bought sauce, its likely tasteless, so add in more garlic, crushed red pepper, basil, and oregano

Cook pasta according to box

Serve meat sauce over pasta - I did 1/2 the pasta and 16 oz meat sauce tonight

1/2 cup almonds, 2 scoops whey in water.
