This was by far and away the best low carb meal I have ever made. Tons of amazing flavors. You won't be able to stop eating either of these dishes.
These recipes combine well together. I enjoyed mixing them, just like you do with the dishes on Thanksgiving. Here are the 2 dishes:
![]() Low Carb MexiCauli Rice Ingredients:
Dice onion, and add it to a sauce pan with 1/4 stick butter and 2 TBSP coconut oil. Cook on medium heat until the onion is soft, but not caramelized. Chop cauliflower into rice-like pieces and add to the pan with 1/2 cup water. Add in the 1/2 packet of Mexican season, garlic power, salsa and a 1/2 stick of butter. Heat on low to medium heat until the cauliflower is al dente. ![]() Chicken with Green Chile and Jack Ingredients:
Cube chicken and cook on high heat with 1/2 stick butter and 2 TBSP coconut oil. When done, remove from heat and place the chicken in a bowl. Toss the liquid left in the pan. Place chicken stock, heavy cream, garlic, salt, pepper, yellow mustard, onion, green chile, green salsa, cream cheese and sour cream in the pan. Cook on medium high heat for 15 minutes, allowing the mixture to reduce slightly. Add the chicken back in, cook for another 5 minutes, pull off heat and mix in the monterey jack cheese. Serve! Top with cold sour cream and jalapeno slices.

Here is the link to the recipe she based it off of:
Zucchini Lasagna | Skinnytaste As always, she made it her own. Instead of following the directions for the meat sauce, she made her own meat sauce. All with fresh ingrediants. It included mushrooms, onions, bell peppers and a good amount of seasonings. It was win. I ate about half a pan. My description doesn't do it justice.

Feel free to play around with the ingredients to your taste.
(base recipe from Weber) 1 1/2 cups roughly chopped tomatoes 1 large ripe avocado, finely diced 4-5 green onions, white part only, finely chopped 1/4 cup finely chopped fresh cilantro 1 tbsp fresh lime juice 1-2 tbsp minced jalapeno peppers, without seeds unless you like it really spicy kosher salt to taste freshly ground black pepper to taste Tabasco sauce to taste Combine all ingredients in a bowl. Cover and refrigerate for 30-60 minutes to allow flavors to blend. |

Home Made Poppers.
--10 Jumbo Poppers, halved and with the innards scooped out. --One box Cream Cheese --1 cup Cheddar Cheese --1 Pack of Bacon Cut the bacon slices in half. Mix cream cheese and cheddar cheese in a bowl. Scoop the cheese into the halved pepper slices. Wrap the bacon around the peppers. Bake on 400 for 30 minutes, or until bacon is crispy. ![]() ![]() ![]()
