1 Lb Ground Beef
1 Lb Bacon - cooked 1 Egg White 1 Tbsp Oregano 1 Tbsp Basil 1 Tbsp Paprika Salt and Pepper to your taste if desired Mix all that together. Cook the bacon first, then let it cool and make crumbles to mix with beef and spcies. Make 6-8oz patties, cook. to your doneness, but medium well is perfect if done correctly. I like a big bulkie roll, slathered with melted butter and grilled along side the burger, and a slice of cheddar or provolone. Side on the plate with some chips and a cold dill pickle, paired with a poured Helles Bock or other medium body lager, chilled to 40 degrees. Yeah, I'm going to go do that right now...serious. Bam! Wait, I can't say that.. That Lagasse guy already says that.. uhh..uhh.. Bam! screw emeril haha

Simple one last night.
Set the grate close to the coals. Quick sear thick cuts of ham on both sides, Add cheese. I made these with Sara Lee Kaiser Rolls, zesty bread & butter pickles. Add some smokey baked beans and a nice cold adult beverage. Fast and simple with little clean up but sooo tasty!

Crock Pot Ropa Vieja
3 pounds chuck roast (cut it into pieces about 2-3 inches on a side - the butcher can do this) 1 small or 1/2 large onion, chopped (red or yellow onion) 1 cup chopped celery (or more) 2 medium green peppers, chopped 2 medium red peppers, chopped 1 can chopped tomatoes (15 oz) 1 small can tomato paste (6 oz) 2 bay leaves 2 Tbsp chili powder 1 tsp oregano 1 Tbsp Beef Better Than Boullion or 3 cubes salt and pepper Preparation: 1) Salt and pepper the meat, and brown it (can chop veggies while meat is browning). 2) Layer onion and celery on bottom of crock pot (slow cooker). 3) Put meat on top. 4) Drain the tomatoes and save juice. Layer tomatoes and peppers over the meat, along with the bay leaves. 5) Mix the rest of the ingredients together (including the reserved tomato liquid) and pour over the rest of the food. Cook 2 to 3 hours on high, or 5 to 7 hours on low. Shred beef when finished or cooled. Nutritional Analysis: Each of 10 servings is 8 grams of carbohydrate plus 3 grams of fiber, 28 grams protein, and 340 calories.

I'm already hungry....
Just sighted my new grill online today. I have a gas grill, but need a better setup for real BBQ'ing.. Pretty much set on a Char-Grill Super Pro, offset cooker. Hell yeah! Almost 600 sq" of cooking area if used conventionally, or a little less if using the side box for smoking. I'm going to splurge and get the cover with it as well. If I order tomorrow, it will be at my house Friday. I can prime it up over the weekend, and be ready for a sweet char smoked brisket the weekend after... :droolinglikehomersimpson:
