Low Carb Thanksgiving

Going to do a low carb Thanksgiving. Feel free to chime in with thoughts, recipes, etc.

--Creamy shredded turkey with cheese.
--Green bean casserole with home made cream o mushroom soup and caramelized onions.
--Brussel sprout halves with bacon in a cheesy cream sauce.

--Brute's chocolate mousse.
--Low carb cheesecake.

Need recipes for:

Homemade cream of mushroom soup, and cheesecake.

I was going to say Thanksgiving comes once a year and you shouldn't hold back....but that menue looks pretty dang good.
