This isn't about carrots per se, this is about the use of vegetable by-products (waste and utilisation of that waste and by-products from it); just an interesting read for anyone looking to read up on what's being added to our foods and why these products are being used etc...
Potato proteins offer blood pressure benefits
I can't copy and paste from the site, so, to sum up briefly:
...Finnish researchers found that proteins isolated from potato may be biologically active and capable of lowering blood pressure; the isolated proteins which are obtained from the waste of the potato product, that is.
There's a little more of interest there but this pretty much sums all of it up, since it's only about potato, but still some interesting reading if you're in to reading about blood pressure and meds etc.
