Avocado Pico
Feel free to play around with the ingredients to your taste.

1 1/2 cups roughly chopped tomatoes
1 large ripe avocado, finely diced
4-5 green onions, white part only, finely chopped
1/4 cup finely chopped fresh cilantro
1 tbsp fresh lime juice
1-2 tbsp minced jalapeno peppers, without seeds unless you like it really spicy
kosher salt to taste
freshly ground black pepper to taste
Tabasco sauce to taste
Combine all ingredients in a bowl. Cover and refrigerate for 30-60 minutes to allow flavors to blend.
