Yesterday I made some Halloween Cookies for my family. They were a hit!
I thought I would share the recipe with you! The recipe is from The Eat-Clean Diet for Men, Tosca Reno.
1/2 c olive oil based margarine or butter
1/2 c raw sugar
1 egg
1/2 c black strap molasses
3 cups spelt flour
1 tsp ginger, 1/2 tsp baking soda, sea salt, cinnamon and cloves
Pre heat oven 325*
Place butter and sugar in a large bowl and let set 15 min.
Add egg and molasses to the bowl, and beat mixture until it becomes fluffy and the sugar begins to dissolve.
In a seperate bowl mix flour, ginger, baking soda, salt, cloves and cinnamon.
Combine wet and dry ingredients. When dough is smooth and all ingredients are combined divide into two balls. Wrap each half in plastic wrap and refrigerate for 1 hour.
Between sheets of wax paper or parchment paper, roll out half of the dough to about 1/3"/1 cm thickness. Remove top sheet of paper. Use a cookie cutter to cut out shapes, re rolling scraps. Transfer cookies to a baking sheet lined with parchment paper. Freeze the cookies for about 12 minutes.
Bake in 325* oven for 12-15 minutes or until the cookies are golden and firm to the touch.
They will make the whole house smell WONDERFUL! Eat and Enjoy!
