My fiancee is learning to cook again! Its been a major help with school and work this semester, stuff has been nuts. We've been on track 2 weeks in a row now, in no small part to her help.
Coffee, 2 tbsp coconut oil, 1.5 scoops whey
4 eggs, 1/4 cup cheddar, 1 low carb tortilla, salsa, sour cream
Lettuce Wrap sandwiches with
2 oz smoked gouda
4 oz hard salami
8 oz sliced turkey breast
stone ground mustard, mayo
3 boiled eggs
Dinner: Cabbage Casserole
1 cabbage, quartered and separated
3-4 pound ground beef
1 onion, chopped
1 can diced tomatoes (or fresh if you can find them in the winter)
1 pound shredded swiss cheese
salt, pepper
Start water boiled for cabbage, place cabbage in boiling water for about 10 minutes.
Cook ground beef in a heavy skillet, when its mostly done pour off any excess fat, add onions and tomatoes, salt and pepper.
Layer cabbage, meat, and cheese, place into a preheated oven @ 350 for 20-30 minutes.
1/4 cup ricotta cream cheese mousse
carbs - 18-24g
protein - 180-200g
