My Cauli mash.
Steam/boil one bag of cauliflower. Toss in a blender with:
--Salt and pepper to taste
--1/3 stick butter
--Minced garlic to taste
--Dash of hot sauce or jalapeno slices
--Cheese of choice - Parm, etc.
--Handful of spinach cooked and wilted down in olive oil (optional)
Blend.
Add in in a slight amount of sour cream and blend again. Continue this process until you reach a desired level of creaminess.
Notes: Sometimes I make this extremely creamy, and serve it on top of pork chop or beef as almost a pseudo-sauce.
