Instead of thinking about lifting the weight off the ground, think about pushing your head up towards the ceiling as quickly as possible. You should feel like your head is the first thing to move up. That should keep your butt from lifting at the start of the lift.

One way of getting used to pushing through your heals is the do RDL's. When you do them, focus on sticking your but out backwards as far as you can as you come down. Not only will this work your glutes and hams, it'll also get you used to the feeling of having all your weight on your heals, because that's where the weight will naturally go as you move your butt backwards to lower the weight.

Edit; I didn't see BTB's response before I wrote mine. How obvious is it that I'm a student of his when it comes to dead lifting?
