Overeating carbs basically get converted to pure sugar in the body, messing up insulin levels and causing a whole battery of other health problems including heart disease.
Paleo eating isn't anti-carb so to speak. You certainly can eat sensible carbs such as veggies and fruits. it just promotes a more healthy eating lifestyle based on real science and human history.
