How can you choose just one! Each movement hits a different part, and all 3 heads work very differently.

So far, in my very limited experience, I'd have to go with:

hips (and legs in general, and the back too): squat
quads: hack squat
hams: hammy curls
calves: calf raises (standing and seated)
lower back (and back in general, as well as hips and forearms and legs...): deadlift
mid back / lats: pullups and bb rows
upper back / traps: shrugs
shoulders (front and lateral delts): strict press
triceps: dips
biceps: db curls
forearms: static holds
chest: paused bench press
abs: (bracing... so if I had to choose an isolation thing, it would be planks)
obliques: (bracing, and unilateral work)


That's everything I can think of!
