Last night I took my wife to our favorite Italian place. Tried a new dish, Pollo alla Fantasia. WOW!

Chicken
artichokes
muschrooms
sundried tomato
A white wine and Balsamic reduction

served with a grilled mixed zucchini and summer squash.

I have a new favorite chicken dish.

Sounds really good. I am so envious. Our local cuisine is really quite pathetic. I am an hour away from any restaurant that serves good, fresh ingredients.

The last weeks I have been adding one more dinner every day, about 1 hour before bedtime. I usually have a XXL serving of pasta w meatsauce or ramen, eggs and chicken.

The sizing of the servings have made me start to use a bucket instead of a plate.

Buckets rules.

This is a favorite back in Hawaii..called a Loco Moco - Comes with Fried Rice, 2 Beef Patties, Over Easy Eggs, covered with brown gravy...heaven!

it varies, but its mostly always with soy sauce or oyster sauce. sometimes kim chi is used to spice it up a bit. most of the fried rice also have some onions, green onions, and chopped meat of choice like bacon, sausage, steak, etc..some good stuff!

I would definitly crush a loco moco! That makes me hungry just looking at it, D!

I once ate 10 peanut butter and jelly sandwiches after a cross country meet. Basically an entire loaf bread and half a jar of peanut butter.

In my fat days, I would order a large pizza for dinner, eat half, ostensibly saving the rest for lunch the next day. Only to devour the other half over the next two hours or so. Same with those buckets of chicken from the colonel. I didn't share those much either. Swede is right buckets rule. Enough salt to curl your tongue doesn't hurt either.

As for the Brazilian steakhouse, I am in! One of my best friends married a Brazilian chef and when we're in LA, she does a full Brazilian barbeque at her house! I have eaten hunks of meat that made me lay down to digest properly.

Ah, good times. I miss my trencherman days sometimes. I don't miss that gut though.
