THis works out really good, timing is everything, from the age of the egg, to cooking time, and time spent under cold water. cold eggs definately peel better.

My mother in law is a chef. You can try this.

Poke a small hole in one end of the egg with a pin before boiling.

I do this.

I use this exact method, but leave them in the fridge overnight, and always can peel them perfectly.

I boil a dozen for 15-20 minutes to make sure they are boiled all the way through, and then let them sit in the water for another 5-10. Then out of the water, into the fridge. Sometimes the membrane sticks, but usually I just crack over my knuckles and I'm good to go with just 2 or 3 big shell pieces..
