Cooking large amounts of food generally works pretty well. On Sunday night or something, make a big casserole and keep it in the fridge...can usually last for a couple more meals. Or cook up a whole chicken (cheaper than buying individual pieces), and then shred the meat off of it and use that for sandwiches.

For breakfast, you could always dump some oatmeal in the microwave. Or if you're not a fan of that, buy some shredded wheat and mix it with cinnamon, raisins, some sort of nuts, and have a protein shake on the side.

Or you could boil a crapload of eggs and make egg salad. And make some potato salad overnight to go along with it.

Something else that I like doing but a lot of people think is super weird, is making spaghetti sauce with ground beef, and then using it in sandwiches...so like a sloppy joe, except cold. It's pretty damn tasty if you use the right bread.
