I always have enough to last me all year long. As a matter of fact I still have 38 lbs from my 9 pointer I got during bow season that I've yet to do stuff with! I still have a chest freezer full of venison of all sorts that I haven't munched down yet lol. We process our own meat. And now that my wife hunts as well its double the meat all the time.

Venison brats thawing out as I type for this evening. My dad and I process our own as well. Nothing goes to waste...Mouth is watering for the brats,LOL

I like doing our own meat sometime getting done somewhere the meat comes back and its horrible! We take all the silver skin out of our meat and its usually a 5 day project since my whole family usually brings deer and helps.

I hear ya, we take are time also. We got some ground stuff back from a processor 3 years ago that had Italian pork sausage mixed in it.

Wow, the only time I've ever heard of adding pork is with pronghorn burger, and you HAVE to or it will stick and burn on the grill.
