Wink Protein Powder Pumpkin Muffins

Thought I would share another recipe with you! This one is wonderful for the month of November!

3/4 c flour
3/4 c ground oats
1 1/2 cups vanilla protein powder
1 1/2 tsp salt
2 tsp ground nutmeg
2 tsp ground cinnamon
1/2 c sugar
1 1/2 c applesauce
1/4 c vegetable oil
1 egg
4 egg whites
15 oz canned pumpkin puree
1/2 c water* I find it is not needed, but it depends on the desired consistency

Preheat oven *350
Stir all wet ingredients into 1 bowl
Stir all dry ingredients into a seperate bowl
Pour the dry ingredients in to the wet ingredients and mix
Spoon into muffin cups and bake for 15-18 minutes and

For those of you whom are MACRO OBSESSED I apologize I don't have the factoids on this one! I can tell you as I was typing this my dad came in, and said he just had one, and I quote, "Man those are GOOD!" But then he eats anything so you decide!

Default 'Brownies with a Twist'

This is my Dad's Favorite! You will see why!

What You'll need

1 cup very strong coffee or espresso
1/2 c butter
1/2 c raw sugar
3/4 c cocoa powder
3 egg whites + 1 yolk
1 c whole wheat flour
1 c dark chocolate chips
1/2 c walnuts (I used almonds this time)

Preheat oven to 350*
spray a 9x9 inch baking pan with cooking spray
melt butter in sauce pan over low heat
add cocoa powder and coffee to the mixture until the cocoa is dissolved
slowly stir the sugar into the mixture until it is dissolved
add eggs and mix until combined
remove sauce pan from the heat
fold flour into the mixture until just combined (do not over mix!)
fold in the chocolate chips and walnuts (again do not over mix!)

spread batter into the 9x9 pan
bake for 25-35 minutes, or until top is not shiny

This recipe was originally from Tosca Reno's 'Eat Clean Book'
I made some modifications

1 cup oat flour
2 scoops vanilla protein powder
2 tsp cinnamon
1/2 tsp baking soda
1/8 tsp allspice
1/8 tsp nutmeg
4 egg whites
8 oz. baby food carrots
*raisins optional

Preheat oven to 350*
Mix flour, whey, cinnamon, allspice, nutmeg and baking soda together in a bowl.
Mix egg whites and baby food carrots in a seperate bowl.
Add wet ingredients to dry ingredients and mix together.
Spray glass pyrex dish with non-stick butter spray.
Pour ingredients into dish.
Bake 20-30 minutes.
*I find 20 minutes is perfect!

FACTOIDS:
Calories: 94
Fats: 1.25
Carbs: 10
Protien: 10
*this does not include the raisins
