Vegetarian meals
 
Does anyone have any good recipes that are for vegetarians? Ones that would have lots of protein in them? I no longer eat any meat, and have not done so in several years. I will do eggs, milk and cheese, just no meats. Much thanks,

I mainly eat non-veg food, but of late I have found it easy to have a largely veggie meal for lunch (easy to prepare and carry). Chick pea salad. A bunch of chick peas, thrown together with some green peas, black beans, yogurt, onions and tomatoes (or pico de gallo if you so prefer) with some sort of wine dressing and some pepper.

For a change, sometimes I put in less of the chick peas and substitute them with scrambled eggs or tuna. Any leguminous stuff will have a decent amount of proteins.

Another good one would be lentil soup. Lentils are a decent protein source too.

I have made Sheppards pie without meat before for lent and it was good. Just use a few cans of green beans drained, top with tomato soup and then top with mashed potatoes. Pretty good.
