What is an incomplete protein and how does it differ from a complete protein?

The short answer, sure to induce rage in the pale and weak, is

Incomplete proteins come from plants and don't have everything your body needs to repair itself
Complete proteins come from animals and are awesome.

The real answer is extremely complex and warrants months of study. Still, eat your eggs, drink your milk, and don't rely on soy as your primary protein source, and you'll be fine.

The Complete Book of Protein Wisdom in a Nutshell.

Not the long answer, but good enough for now.
