What is the difference between iodized salt and one that is not iodized? Does it really matter if I get one or the other?

Iodized salt has iodine in it. If you need more iodine in your diet, used iodized salt, otherwise it doesn't really matter.
Unless you're a chef of course, then salt type matters for the dish, but that is a different story.
