For me, my favorite ingredient is taco leftovers (seasoned meat, onion, tomato, taco cheese, maybe peppers, maybe not). Sometimes I'll put it in a tortilla for a breakfast burrito.
I forgot exactly how to do this but, I used to make a sweet omelette where I would fry some apple slices and finish them off in a wine flambe. Kind of a variation on Bananas Foster, which might also work.

One of the best omeletes I have ever had was from a truck stop. A taco omelet. It had taco meat in it, with lots of cheese and some salsa over the top of it as well as sliced black olives. I would kill to have one of them right now, it was so good.
