There seems to be some interest in this thread, so I may as well start updating it again.

Currently, working on dropping some fat. Sitting at 307 as of this morning, would like to see 275 by April. Don't think I want to get a whole lot lighter than that as I feel like I look too small in the 250s

Friday's Food

5 Eggs, 2 strips bacon, 32 oz coffee with 2 tbsp coconut oil & 1 scoop whey

Left over cabbage casserole, 1 scoop SynMax in water

Dinner:
Mexican Steaks and Stuffed Peppers with guacamole

Steaks: 1 inch thick ribeyes, about 1 pound each. Seasoned with cayenne, cumin, salt, pepper, and garlic. Cooked medium rare on gas grill

Peppers:
2 Poblano peppers, top removed
8 oz pork chorizo
8 oz shredded mexican cheese

Pre-heat over to 350.

Remove top from peppers.

In a small pan, cook chorizo through. Mix with cheese and spoon into the peppers.

Place peppers in a baking dish, place in over for about 20 minutes.

Magical pizza yesterday. Based off of the chicken crust recipe, didn't quite like how that one went, so borrowed some ideas from other books and my own deranged mind.

Ingredients: For the crust
2 chicken breasts - cooked
1 cup mozzarella
1 cup parmesan
2 eggs
1/4 tsp garlic salt

Sauce:
1/2 stick butter
1/2 onion finely chopped
1 tbsp garlic
1 cup cream
1 tbsp oregano
1 tbsp basil

Toppings
Sliced tomato
Sliced fresh mushrooms
Torn basil
MOAR CHEESE

In a large food processor with the S blade, chop the chicken until it it pretty well ground up. Add the rest of the ingredients and mix well.

Place into a greased 10" spring form pan, 11" cast iron skillet, or 13x9 baking pan. Cook at 375 for about 20 minutes

Sauce:
Melt butter in a sauce pot on medium high heat. Add onion and garlic, cook until onion is translucent. Add in cream and other ingredients, turn heat down to medium, cook until sauce thickens, stirring frequently

Once crust comes out, add sauce and toppings and place back in over for another 20-25 minutes.
