Destroyed some food yesterday and went light today for the most part. I've been allowing myself store bought low carb tortillas lately to break the monotony and help stay away from far worse things.

Saturday
Coffee w/ Whey
6 eggs, 3 strips bacon
8 oz canned tuna w/ Paleo Mayo, Mustard and parmesan cheese

Parent's place for the almost weekly dinner
1 dozen wings, mix of sticky wings and peanut wings. No idea what was in them, but they were good.

Roast Beef in Asian Mushroom Sauce over Cauliflower "Rice"
Not sure about this either, but it was pretty much a 5 pound beef roast in the crock pot with chinese 5 spice powder, garlic, some soy, and probably something else. Very good, but I had to add a lot of butter to the rice due to the low fat content.

Today was sort of hodge podge

2 "calzone" made with low carb torillas and pizza toppings
Smoothie with berries and 2 scoops whey

Smoked Chicken, BBQ Beef Ribs, and Cauliflower Mashed potatoes

I had one last rack of Beef ribs from the summer in my freezer and supplemented them with one of the 100+ chickens we smoked. In the over @ 325 for 2 hours. Damn tasty.

Arg. I've got to start packing something to eat between when I lift and when I finally get home.

You have a dehydrator? I own one and am working on my own jerky, but still haven't perfected it yet.

The above statement should have been "string cheese". I get the pepper jack. It's a solid road food.

As promised, the recipe for Apricot Pork! But first, the other things I consumed

Coffee W/ Whey
6 eggs, bacon
Wrap with 6 oz turkey, moar bacon, gouda, lettuce, pepperoni, black olives, mustard
Smoothie

Dinner: Apricot Pork - I ate 46 oz of the pork for dinner
6 pounds pork butt (bone in for better flavor)
1 large onion
1/2 cup sugar free apricot jam
2 cups chicken broth
1 tbsp balsamic vinaigrette
1 tbsp lemon juice
salt/pepper

Brown the pork in a large skillet, transfer to slow cooker.
Chop onion, scatter around the pork

Mix other ingredients in a bowl, pour over pork.

Cook on low for 8 hours.

Serve with the broth over the pork. I also made a large mixing bowl worth of broccoli butter to go with it.

No dehydrator yet, but I think my folks have one they never use. I'll see if i can borrow it for a week and get one if it works well. Also picked up some sharp white chedder mini wheels for the road. Test drove one with half an apple this afternoon and damn it was good.

Today's food sounds like more than it feels. I'll probably end up eating something with meat and cheese later tonight, but not sure what's defrosted.

Coffee w/ whey
5 eggs and 3 strips bacon (each strip is about an ounce before cooking)
1/2 cup almonds
1# left over pork roast (finished a 6-7 pound roast in 18 hours...)
1/2 apple & 1 mini cheese wheel (around an ounce)

Dinner : Spicy Peanut Chicken I had forgotten how good this is! I ate 2/3 of it.

3 chicken breasts
1 tsp cumin
1/2 tsp cinnamon
1/2 Onion thinly sliced

Sauce:
12 oz tomatoes
3 tbsp peanut butter
1 tbsp lemon juice
3 jalapenos
3 garlic cloves

Heat a skillet that has a cover up on medium/medium-high heat, add chicken, sprinkle spices on it. While it heats, run all the ingredients for the sauce through a food processor.
Flip breasts after about 6 minutes
Add onions and sauce, cover, and cook until done, around another 10 minutes normally.

Serve with a green veggie as a side, broccoli goes really well with this, plenty of butter.

Chicken Alfredo over Fettucini
Nothing real exciting here. A jar of classico alfredo sauce, 3 chopped chicken breasts, and 1/2 a box of dreamfields pasta. Easy and filling, nice for a thursday.
