By request, the Low Carb Gumbo! This is good.


1/4 cup bacon grease
3 tbsp coconut flour
3 tbsp almond flour
2 cups onions chopped
2 cups celery chopped
2 cups green pepper chopped
3 cloves garlic minced
1 quart canned tomatoes
2 cups chicken stock
3 bay leaves
1/2 pound lump crap meat
2 pounds shrimp
1 pound andouille sausage
1 tbsp file powder

Heat the grease, add flour and stir until good and melted
Add veggies and cook them down
Add tomatoes, stock, bay leaves and bring to simmer
stir in meat and cook through
Remove from heat and add file powder
Stir and serve alongside cauli rice

Been busy as heck lately, went through my pre-cooked meat in the freezer. Meat!

I can say 100% that if I hadn't pre-cooked several pounds of pre-spiced meat I would have most likely fallen off the wagon and had to start over.

Having this tonight.


Laarb

Ingredients

12 inch stick of fresh lemongrass
6 pieces of kaffir lime leaves
bunch of cilantro
vietnamese coriander (also called rah ram Persicaria odorata - Wikipedia, the free encyclopedia or "laksa leaf")
mint
a bunch of green onions (scallions)
thai peppers
lime juice
fish sauce
black pepper
salt
5-7 lbs of extra lean ground beef


Directions

Chop the lemongrass into fine pieces
Mince the kaffir lime leaves into extra fine pieces.
Coarsley chop the cilantro
Slice the green onions into little rounds
Chop the thai peppers into small pieces
Pull off the mint leaves from the stalk (you can use them whole or chop them up)
Pull off the vietnamese coriander from the stalk (same as mint)
**Now that the chopping and stuff is done you can cook the meat**
Cook the ground beef in a pan on medium heat.
Add salt and black pepper to season. You will be adding fish sauce later so make sure not to salt too heavily at this time.
Cook until there is no pink and there is still some juices left in the pan.
Let the meat cool for a few minutes.
Put the meat in a large bowl that you can easily stir.
Add the Thai peppers first so that it can marinate with the meat.
Add the lemon grass, kaffir lime leaves in next.
Stir until well mixed.
Add a lot of fish sauce and lime juice.
Stir.
Add the cilantro, mint, viatnamese mint, green onions last.
Stir gently until incorporated so you don't bruise the herbs.


Eat. (PrimalBeard commentary: Goes well on Lettuce and on Celery. Also goes well via spoon directly into your mouth.)

Going to try to start posting in here regularly again.

Nothing exciting today, some low carb stuff that would make the die hard paleo-ers cry.

Cabalose pancakes with sugar free syrup. Thats right. nothing natural to see here.

Pastrami lettuce wraps for lunch.


Dinner: Bratwurst Stew


3 pound bratwurst, pre-cooked
4 cups shredded cabbage
1 medium onion, chopped
1 red bell pepper, chopped
2 rutabaga, peeled and diced
32 oz chicken stock
1 tbsp dijon mustard
1/4 tsp celery seed
salt
pepper

Optional - swiss or jarlsberg cheese to top

Combine in a large dutch oven and let simmer for a few hours.

Coffee, 1.5 scoops whey, 3 tbsp coconut oil

1.5 cups chili

4 boiled eggs

1 oz mixed nuts, 1 scoop whey in water

Dinner:
Chicken Salad with bacon, parmesan cheese, and ranch dressing

Post Dinner - some left over lasagna with DreamFields noodles

Decaf coffee w/ 1.5 scoops whey, 3 tbsp coconut oil

Carb Range - 25-30g useable

Protein Range - 230-250g

Its sort of luck of the draw on things like the chili and lasagna, depends on how much meat I got compared to the rest of it. The chicken was about 3 breasts, grilled and chopped, so round about 90g protein.

Not exact, but close enough for a fat dude.
