Its still dangerous. Its easy to let the carb addiction get through and eat a whole box of it at once. Time and time again I prove to myself it doesn't matter what it is if you eat 6x the amount you're supposed to.

Getting this started back up. This is day 2 of low carb. Seeing improvements already. Down 1 notch on my belt. Feeling more alert.

Sunday was pre-cooking day. recipes when I get a chance, but here is what I cooked.

Meat:
1 quart taco meat
2 quarts spaghetti meat (no sauce)
6 1/4 inch thick round steaks (I like these with fried eggs for breakfast)
1 ham steak (for eggs)

Eggs:
8 servings eggs: each serving has 4 eggs, some ham, and onion
16 boiled and peeled

Casseroles - note paleo dishes substitute cauliflower mash for pie crust or potatoes
Shepherds Pie (paleo)
Chicken Artichoke Florentine Bake x 2
Chicken Pot Pie (paleo)

Dinner: Ginger Cream Cod with cauliflower mash and broccoli

Parmesan Artichoke Chicken Bake
4 chicken breasts, diced and cooked - ether grilled or browned in a pan, chopped
1 onion, chopped and cooked in butter
1 quart fresh spinach, cooked in butter until limp


In a bowl, mix
2/3 cup heavy cream
1/2 cup water
1 pound Monterrey jack cheese, shredded
2 eggs, beaten
1/2 cup sliced sun dried tomotoes
1 14 oz can artichoke heart quarters
1/2 cup parmesan

Combine in a 13x9 baking dish, cook at 350 for 45 minutes

Chicken Pot Pie (paleo)
4 chicken breasts, cooked and chopped
3 cups mixed veggies ( I have carrots, green beans, onions, and broccoli)
1 15 oz can on the lowest carb alfredo sauce you can find
1 batch cauliflower mash

mix chicken, veggies, and alfredo together in a baking dish. top with cauli. bake at 400 for 25-30 minutes.

Shepherds Pie

1/4 cup chopped garlic
3 pounds ground beef (substitute your favorite meat if you like)
2 cups onions chopped
2 cups carrots, chopped
2 stalks celery, chopped
1 tbsp rosemary
2 tsp thyme
4 cups chopped tomatoes
2 tbsp balsamic vinegar
2 tbsp Worcestershire Sauce
1 batch Cauliflower Mash

Cook the meat in a large dutch oven. Remove to a bowl, cook veggies in the fat and moisture (you may need to pour some off if you have a lot of fat in the bottom)
Add meat back in, everything else but cauli mash. Stir for a few minutes

Place mixture in a 13x9 pan. Top with cauli mash. Bake @ 350 for 20 minutes.
