This was by far and away the best low carb meal I have ever made. Tons of amazing flavors. You won't be able to stop eating either of these dishes.

These recipes combine well together. I enjoyed mixing them, just like you do with the dishes on Thanksgiving.

Here are the 2 dishes:
  • Low Carb MexiCauli Rice
  • Chicken with Green Chile and Jack



Low Carb MexiCauli Rice

Ingredients:
  • Medium White Onion
  • 1 Head Fresh Cauliflower
  • Butter
  • Coconut Oil
  • 1/2 Packet Mexican Seasoning
  • 12 ounces of Salsa
  • Salt and Pepper to taste
  • 1/2 TBSP Garlic Powder, or Fresh Garlic to taste

Dice onion, and add it to a sauce pan with 1/4 stick butter and 2 TBSP coconut oil. Cook on medium heat until the onion is soft, but not caramelized.

Chop cauliflower into rice-like pieces and add to the pan with 1/2 cup water. Add in the 1/2 packet of Mexican season, garlic power, salsa and a 1/2 stick of butter.

Heat on low to medium heat until the cauliflower is al dente.



Chicken with Green Chile and Jack

Ingredients:
  • 2 pounds of Chicken
  • 1 Medium Onion
  • Butter
  • Cocounut Oil
  • Salt and Pepper
  • 2 TBSP minced Garlic
  • 8-12 ounces of Green Salsa
  • 2 Cans of Green Chiles, 4 ounces each
  • 1 Cup Heavy Cream
  • 1/2 Stick Cream Cheese
  • 8-12 ounces of Sour Cream
  • 8 ounces of Monterey Jack Cheese
  • 3 TBSP Yellow Mustard
  • 1 cup Chicken Broth

Cube chicken and cook on high heat with 1/2 stick butter and 2 TBSP coconut oil. When done, remove from heat and place the chicken in a bowl. Toss the liquid left in the pan.

Place chicken stock, heavy cream, garlic, salt, pepper, yellow mustard, onion, green chile, green salsa, cream cheese and sour cream in the pan. Cook on medium high heat for 15 minutes, allowing the mixture to reduce slightly.

Add the chicken back in, cook for another 5 minutes, pull off heat and mix in the monterey jack cheese.

Serve!

Top with cold sour cream and jalapeno slices.

Fast Paleo Cauli-Egg Wraps or Pizza Crust - Paleo Recipe Sharing Site

--3/4 cup raw grated cauliflower (or chopped in food processor)
--1 Organic Egg
--Garlic Powder (or whatever spices you like-dill goes great for "wraps")

I make a sour cream and salsa dipping sauce for my chicken, if that helps. Or sour cream and blue cheese dipping sauce for my wings.

I bake them until the skin is crispy, toss in a mix of butter and hot sauce, and then dip.

Default Kelly's Low Carb Lasagna

Here is the link to the recipe she based it off of:

As always, she made it her own. Instead of following the directions for the meat sauce, she made her own meat sauce. All with fresh ingrediants. It included mushrooms, onions, bell peppers and a good amount of seasonings. It was win. I ate about half a pan. My description doesn't do it justice.

"Corn"dog mini-muffins ~ Stuff I Make My Husband

GRAIN-FREE CORN DOG MINI MUFFINS
Makes about a dozen

INGREDIENTS
About three hot dogs (preferably nitrate-free/grass-fed)
1/3 cup coconut flour (preferably Let's Do Organic brand; it's coarsely-milled and the texture is more cornmeal-like)
1/4 cup butter or ghee, melted
4 eggs, beaten
1/4 tsp salt
1/4 tsp baking powder
Freshly ground pepper
DIRECTIONS
Preheat oven to 400 F
Trim the ends off of the hot dogs and cut each one into 5 uniform pieces.
Whisk the coconut flour, salt, baking powder, and pepper in a large bowl. In a seperate bowl, combine the melted butter and eggs. Add the wet ingredients to the dry and mix well.
Grease a mini-muffin pan (preferably silicone). Fill each one 3/4 of the way up with batter. Vertically place a hot dog piece in the center of each one.
Bake for about 20-25 minutes or until golden brown. Serve with dipping sauce of choice, such as ketchup or mustard.

Default Avocado Pico

Feel free to play around with the ingredients to your taste.
(base recipe from Weber)

1 1/2 cups roughly chopped tomatoes
1 large ripe avocado, finely diced
4-5 green onions, white part only, finely chopped
1/4 cup finely chopped fresh cilantro
1 tbsp fresh lime juice
1-2 tbsp minced jalapeno peppers, without seeds unless you like it really spicy
kosher salt to taste
freshly ground black pepper to taste
Tabasco sauce to taste

Combine all ingredients in a bowl. Cover and refrigerate for 30-60 minutes to allow flavors to blend.

Home Made Poppers.

--10 Jumbo Poppers, halved and with the innards scooped out.
--One box Cream Cheese
--1 cup Cheddar Cheese
--1 Pack of Bacon

Cut the bacon slices in half. Mix cream cheese and cheddar cheese in a bowl. Scoop the cheese into the halved pepper slices. Wrap the bacon around the peppers.

Bake on 400 for 30 minutes, or until bacon is crispy.
