Paleo Bread

3.5 cups almond meal
3/4 tsp baking soda
1/2 tsp salt
4 eggs
1 tbsp honey
3/4 tsp apple cider vinegar.

Pre-heat oven to 300
Mix dry ingredients and wet ingredients in separate bowls.
Mix everything together.
Add batter to a greased bread pan.
Bake for about 45 minutes.

Its not "bread" as you would normally think of it. Its more like cornbread. Tastes great, good for you, and great with soups.

Trader Joes appears to be the cheapest but the closest is an hour away. We have a local store which is about $5 which isn't too bad.

Low-Carb Cheesecake

Low-Carb Cheesecake - Sugar-Free Cheesecake Recipe

Ingredients:

3 packages (1 and 1/2 lbs) cream cheese (room temperature)
4 eggs (preferably room temperature)
1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
1 and 1/2 teaspoon (1/2 Tablespoon) lemon juice
1 and 1/3 cups sugar equivalent of artificial sweetener (I like zero-carb liquid sweeteners for this recipe)
1/4 cup sour cream
Crust:
1 cup almond meal
2 Tablespoon melted butter
2 Tablespoon sugar equivalent in artificial sweetener
Preparation:

Heat oven to 375 F.

Tip: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the lower rack of the oven. This will hold the heat in the oven. This is good for cheesecakes not baked in a water bath. (Well, actually, it's helpful for any kind of baking, as it keeps the heat in the oven more constant. I keep a pizza stone in the oven most of the time.)

Combine ingredients for crust, and press into the bottom of a springform pan. Bake for 8 to 10 minutes, until fragrant and beginning to brown.

Raise oven heat to 400 F, or lower to 350 F if you're using a water bath (see below).

Put cream cheese in mixing bowl, and beat until fluffy. Add other ingredients, scraping the bowl and beaters each time (this is very important), fully incorporating each ingredient. When all ingredients are combined, scrape one more time, beat one more minute, and pour mixture into pan over crust.

Instructions for water bath: Wrap the bottom and sides of the springform pan in foil, put it in a baking pan and pour boiling water around the sides. Bake at 350 F for 60 to 90 minutes, checking often. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Instructions for non-water bath: For this method, you start the cake at a high temperature, and it slowly drops. If you have stoneware, bricks, etc, this allows it to happen at a slower rate, and I get better results in less time. Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Chill completely. Top with fruit, if desired, such as Sugar-Free Strawberry Topping.

Makes 16 servings.
Nutritional Information: Each serving has 2 grams effective carbohydrate plus 1 gram fiber, 6 grams protein, and 221 calories.

* Alton Brown of the "Good Eats" TV show says of pizza stones: "You could march down to Gourmets 'R Us and plop down 30 or 40 bucks for a pizza stone. But a well-placed, unglazed quarry tile for 99 cents from a building supply will do the job just fine."

Bacon Braised Brussels Sprouts in Cream

Serves 4-6
* 1 pound brussels sprouts
* 2 pieces bacon, roughly chopped
* 1/2 cup heavy cream
* 1 pinch salt
* 1 tablespoon lemon juice
* 2 tablespoons flat leaf parsley, chopped
1. Wash brussels sprouts, remove outer leaves and bottoms, slice in half.
2. In a large heavy saucepan that has a tight fitting lid, brown bacon until crisp. Remove bacon, leaving fat in the pan.
3. Add brussels sprouts to bacon fat and cook over high heat, stirring frequently, until sprouts have begun to brown.
4. Add cream and a pinch of salt, stir, then cover with a lid and cook over medium low heat until cream is absorbed, about 15 minutes.
5. Add lemon juice to sprouts and stir to combine. Finish by sprinkling parsley and crumbled chopped bacon over the dish.

Zero Carb Bread

Given to me by Randoja



Spray a cereal bowl with PAM

Place the following inside and mix thoroughly

1/4 cup Egg Beaters <-------------Put this in FIRST!
1/4 cup Flax
1/4 cup Almond Meal
1/4 tsp baking powder
1/4 Tsp Salt (I dont like salt so u may need to double)

Mix thoroughly

Microwave 1 minute (to 1.5 minutes)

DONE - It will fall out of the mug

The guy who made the recipe goes on to say

If you are not worried about calories, a tbls of butter or oil of choice would be a great addition but NOT NEEDED

Someone also recommended adding cinnamon and splenda which seems legit.
Double this, used 3 eggs instead of that egg white only nonsense, and added 1/4 stick of better and some garlic.

Taste is decent, perfect for burgers.

Dirty Cauli-rice

From EliteFTS:

Head of cauliflower
2 – 4 cloves of garlic
1 TBSP olive oil
Green onions

“Dirty” means you can basically toss in anything in your fridge. I threw in some shredded carrots, too. You could add chopped celery, jalapenos, mushrooms, etc, etc. Basically, whatever you want to snazz it up.

Directions

First, you want to “rice” your cauliflower. Cut the florets off first, then there are two easy ways to do this; either toss it in your food processor and give it a rough chop until it processed down to rice-sized bits, or you can use a cheese grater and grate it (be careful). Or, if all else fails, you can chop it up by hand.
Heat up the tablespoon of olive oil and toss in your garlic and onions first to get those warmed up.


Then, add your “riced” cauliflower, along with the stock and anything else you want to toss in there. Take the heat down to low, stick a lid on it, and let it simmer for about 20 minutes.

You could add some Bragg’s Aminos, Sriracha and some ginger to give it an asian twist, or you could add green chiles, cilantro, jalapenos and some hot sauce to have a spicy version. The spicy version is excellent with some meat and avocado!
