Low Carb Desserts

Low Carb Brownies
Makes about 48 (or less if you are greedy like me )

1 cup ground almonds, well sifted (most supermarkets do ground almonds)
1/2 teaspoon baking powder
1/2 teaspoon salt
1-3/4 cups Splenda or granulated Maltitol etc
1 cup unsalted butter
4 ounces unsweetened baking chocolate (or good quality dark choc), chopped
2 teaspoons vanilla essence
4 extra large eggs, beaten
1 cup chopped pecans

Preheat oven to 350 F. Butter a 9" x 13" cake pan. Stir together almonds, baking powder, salt and Splenda; set aside. In a microwave bowl, on high, melt the butter and the chocolate, stirring frequently. Add the Splenda, the beaten eggs and vanilla; beat until well blended. Stir in the dry mixture, mix well, then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 48 squares.

Note: 1.8 net carbs per square



Now before I made them, I thought they're going to taste LIKE a substitute, I love being primal but there are some things I miss. But I kid you not, these are the same, if not better ( especially the preecooked melted mix, gosh!) than normal brownies. I've had 4 squares and decided to stop now. If you've not yet made brownies yet, try them! They are absolutely astonishingly delish.

The consistency is pretty much the same, very light feeling, no stodgyness. Impressed!

Chocolate mousse.

One block cream cheese. About 3/4 cup heavy cream. 1/4 cup Splenda, 1/4 cup cocoa powder. Beat together slowly with mixer. Add additional Splenda and cocoa to taste.

This is rich and tasty.

BTB those look amazing. Makes me want to go and make a batch right now, but if I do, I won't have much willpower as I love chocolate.

Chocolate cakes with sea salt and olive oil (grain/dairy/sugar free) ~ Stuff I Make My Husband



For the cake:
1 bar (about 4 oz) unsweetened chocolate, chopped
5 Tbs extra-virgin olive oil, plus extra for drizzling
1 Tbs Grand Marnier or 1 tsp vanilla extract
Sweetener of choice to equal 1/2 cup sugar (I used Truvia). If you use any granular sweetener, powder it in a blender or spice grinder first.
1/2 cup (56 grams) almond flour
3 large eggs, separated
Fleur de sel or other coarse sea salt, for sprinkling
For the ganache:
1 bar (about 4 oz) unsweetened chocolate + stevia extract to equal 1/2 cup sugar, OR use 4 oz semisweet chocolate
1 mini 5.5 oz can Thai Kitchen coconut milk (or 1/3 cup coconut milk), stirred
1 Tbs coconut oil or ghee

Low carb QuestBar cookies ...

This is a REALLY simple one ...

1) Cut Quest Bar into desired number of cookies (I did 3)
2) Microwave for 10sec and then mold to desired size/shape
3) Pre-heat oven to 350 degrees and then bake cookies for approx 8min
- We topped ours with a little bit of organic peanut butter sauce :)

That's it ... just let cool and then enjoy! :)
These were DELICIOUS!!!

Mine were Chocolate Chip Cookie Dough ...

The wife's were Fudge Brownie ...
