It may be a case of seeing a doctor to make sure there is no underlying condition; some women suffer depression and so forth after having a baby, without ever being diagnosed and then realise years too late what they were going through...so, a doctor's visit may not be a bad idea.
Good post here. I would get her to the Doctor and get some bloodwork and a check up done. My first thought was anemia, my wife struggles with it too.

and when you get home from the doctor.....give the poor girl a back rub and get her to relax. sounds like she is very active and very busy in life. the stress alone could fatigue her then adding physical activity to it without proper rest can damn near kick anyones ass.
