Do not be afraid of upping your fat intake. Fat is not your enemy. Make sure you are getting enough good protein, carbs from plant sources, and plenty of fat.
Fat has been demonized in our society over the last half century by so called experts who were only looking to get published to secure funding for their work.
3 solid sessions a week on big compounds, and make adding weight your main mission. You don't need to accomplish every movement that has ever been devised to pack on muscle. In fact the basics are what you need. Shun machines, and stick with barbells, and dumbells.
Try eating 3 LARGE meals a day, and have some filler food in between.
drink a milkshake everyday.
2-3 scoops of good quality ice cream
1-2 cups whole milk
2 scoops protein powder
Blend well and drink.
