I like to get a big fillet with the skin on one side, marinate with lemon juice season with lemon pepper for about 10 min. Put it on a hot grill skin side down. Grill for 10 min, then flip it over to get them nice Grill marks on it for 5 min. At this point the skin will just fall off. Peel it off and serve on a plate grill marks up. My favorite, of course times will have to be adjusted depending on the thickness of the fillet
